Daggers have the best riposte damage in DS2. I'm not sure other than that. You can go to a higher level area, find an enemy, and practice parrying and riposting with different weapons. Greatsword has been my personal favorite for PvE. Its R2 does stay locked, but you have to control its direction. If you press R2 and tilt your stick down at the same time your guy will just R2 the other direction. Balder Side Sword is pretty much the king of longswords. Battle-Axe is probably the best low stat smacker. Rapier can drill a single opponent really fast. Zweihander is a good light weight ultra greatsword. It has the ability to stun even heavy enemies (the R2 will literally smash black knights flat into the ground.
