My engine cooling fans continued to run to cool the engine after the key was removed. The fans were loud enough I mistakenly took it as my engine still running. The issue ultimately was the engine temperature sensor. Repaired it and it resolved the issue. $30 fix. Your issue seems to be from the AC high side high limit switch which is causes the fans to hit max. Most likely it's a plugged orifice tube causing this. The AC runs in defrost mode also.

The thermostat is most likely stuck open, or the temperature sender/gauge is wrong. Fan running or not, the temp should hover around 180-190 or maybe a touch above under heavy load, not 160. The gauge may well just not be working. Your fan running after the engine is off is not entirely unheard of.
